2½ tbsp. vegetable oil
1½ c. chopped onion
2½ c. sliced mushrooms
3 garlic cloves, minced
¾ c. (about 6 oz.) chopped celery

8 c. stale bread cubes (prefer French, Italian, or sourdough)

1 lb. Andouille sausage, sliced thin
12 oz. cheddar cheese, shredded
¼ c. chopped green onions

4 eggs, lightly beaten
2 c. milk
1 tbsp. dijon mustard
1 tsp. salt
1 tsp. ground cumin
¼ tsp. black pepper
¼ tsp. cayenne

In a medium skillet, melt butter. Saute onion, mushrooms, garlic, and celery until limp, about five minutes. Set aside.

Lightly grease a 9 x 13-inch baking dish. Spread half the bread cubes in the bottom, followed by half the sausage, half cheese, half vegetable mixture, and all the green onions. Repeat the layers (you might have to press down on first layer to make room for second layer).

In a small bowl, combine eggs, milk, mustard and seasonings. Pour this mixture all over the top of strata. Cover and refrigerate overnight, allowing the bread to soak up the milk mixture.

Bake, uncovered, one hour at 350º.
