3 cans of minced clams, drained (save the juice)
1 T. lemon juice
1 stick of butter
1 medium onion, diced
1/2 red or green pepper, chopped
1/4 c. chopped parsley
1/2 T. oregano

3/4 c. italian breadcrumbs
parmesan cheese
salt to taste

crackers, bread or pita (to serve)

Preheat oven to 350º. Grease a pie pan, or oven proof dish.

Melt butter in a skillet over medium heat. Then sauté onions and pepper until the onions are golden. Stir in the lemon juice.

Mix herbs and breadcrumbs in a small bowl. Add onion mixture. Then, stir in clam juice a little at a time until mixture is soupy, not dry. Add a dash of salt.

Pour into prepared dish and sprinkle the top with grated parmigiana until covered.

Bake for 15-18 minutes, until top is bubbly and cheese is golden in color. Serve warm with crackers, pita or bread.
