Greek Yogurt Tartar Sauce


Ingredients:

1/3 c grated parmesan cheese
1/3 c whole wheat panko bread crumbs
1/4 c all purpose wheat flour
1 jumbo egg, lightly beaten
1 1/4 lbs cod, cut into 4 portions
Salt and pepper
Olive oil cooking spray

Directions:
Directions:
Place a wire rack on a rimmed baking sheet in the oven
Preheat oven to 450º F

Combine panko and parmesan cheese together in a shallow dish
In a second shallow dish, lightly beat the egg
Put the all-purpose flour in a third shallow dish

Sprinkle cod with salt and pepper
Dredge the cod in the all-purpose flour, shaking off the excess
Dip in egg, coating both sides, allow excess to drip off
Coat both sides with panko mix
Coat top with olive oil cooking spray

Remove pan from oven
Place fish, sprayed side down, on top of wire rack
Spray top with cooking spray

Bake until golden brown, ~ 10 - 14 minutes

2 Tbsp sweet relish or dill pickles, finely chopped (whichever you prefer)
1 Tbsp minced shallots

Store in fridge until fish is done
