2 T. Butter
2 T. All Purpose Flour
1 3/4 c. Whole Milk
2 c. (8 oz.) Shredded Mozzarella Cheese
3/4 c. (3 oz.) Grated Parmesan Cheese
7 oz. Spaghetti, cooked according to directions and drained (NOT thin spaghetti)
1 1/2 c. Chopped Cooked Turkey or chicken
1 4 oz. can sliced mushrooms
2 T. Chopped Pimento (optional)

Preheat oven to  350 degrees.Melt butter in a large sauce pan over low heat. Blend in flour. Gradually add milk. Cook, stirring constantly until thickened. Add 1 1/2 cups Mozzarella cheese and 1/2 cup Parmesan cheese. Stir until melted.  Add cooked spaghetti, turkey, mushrooms and pimento if using. Stir to combine all. Spray  1 1/2 quart casserole dish with non-stick spray. Pour mixture into casserole.  Bake 20 minutes. Top with remaining Mozzarella and Parmesan cheeses. Return to oven and bake until cheese is melted.
 
** If you add more cheese than recipe calls for; and it looks dry, add 1/4 c. warm whole milk, stirring well, until desired consistency.
