24 oz. frozen shredded potatoes
salt and pepper
12 eggs
2 cups half and half
1 tsp season salt (I prefer Adobe)
1½ cups cheddear cheese, shredded
1½ cups pepper jack cheese, shredded
2 cups chopped ham (or preferred meat, sausage? or even a combo of both)

Directions:

1. Preheat oven to 350º.

2. Grease 9x13 inch pan. Add frozen and shredded potatoes to the bottom of the pan. Sprinkle with salt and pepper.

3. In a large bowl, whisk the eggs together. Add half and half, season salt, cheddar cheese, pepper jack cheese, and chopped ham, sausage, or combo of both.

4. Pour over the top of the frozen potatoes. Cover with foil and refrigerate for 2 hours or overnight.

5. Bake covered in foil at 350º for 90 minutes. Let rest for 10 minutes before serving.
