8 oz. penne
¼ cup heavy cream
2 tbsp. olive oil
½ cup pancetta, cubed
¼ cup onion, chopped
2 garlic cloves, chopped
pecorino cheese (or blend of parmesan and romano grated cheese)
16 oz. marinara sauce
3 oz. vodka
black pepper, top taste
salt, to taste

Directions:
Directions:
1. Bring a pot of water to a boil. Cook the penne al dente.

2. Begin by adding olive oil to a deep skillet and heating over medium heat. Once the oil is heated, add the pancetta and fry for about 2 minutes. Next, add the onion and garlic, making sure to stir frequently to keep from burning. Fry for about 2 minuets.

3. Lower the flame and pour the vodka into the skillet. Stir and let simmer until the alcohol evaporates, which is about 3 minutes.

4. Add the tomato sauce, black pepper and salt and continue to cook for about 5 minutes, stirring occasionally.

5. Add the heavy cream and continue to cook over a low flame for another 5-8 minutes.

6. Once the penne is al dente, strain and add directly into the vodka sauce skillet and cook for another 5 minutes.

7. Remove from heat, pour into a serving dish, sprinkle some freshly grated pecorino cheese and serve!

If using homemade sauce that is cooked prior to being stored you do not need to cook for as long. If using store bought sauce,(which you will never do, RIGHT!!!) you will need to cook the sauce longer.
