Coconut Carrot Cake Recipe

¼ tsp allspice
¼ tsp nutmeg
2 tsp cinnamon
2 c. flour
2 ½ tsp baking soda
1 c. vegetable oil
2 c. sugar
3 eggs
1 8oz. can crushed pineapple
1 ½ c. nuts, chopped, pecan or walnuts
1 c. raisins put in cake or in the icing
2 c. carrots, grated
1 ½ c coconut flaked
1 3oz. pkg cream cheese, softened
¼ c. butter
3 c. powdered sugar
1 Tbs milk
½ tsp vanilla extract

Directions:
Directions:
1. Combine together: flour, soda, cinnamon, allspice, nutmeg.
2. Combine and beat until golden, oil, sugar and eggs, fold in pineapple, carrots, coconut and nuts.
3. Add dry ingredients, and mix well.
4. Pour into a 13 x 9 x 2 inch greased pan. Bake 50-60 min. at 350*, Cool 10 min. and remove from pan if desired.

Cream Cheese Frosting
Toast 1 c. coconut and cool.
Cream together cream cheese, butter and alternately add powdered sugar and milk and vanilla. Beat till smooth. Add ½ of the coconut and raisins to frosting. Frost cake and top with remaining coconut.

I forgot the coconut in the cake and it turned out great. Try it without coconut for a more traditional carrot cake.
