• ½ lb. mushrooms
• ½ cup olive oil and juice of ½ lemon
• ½ tsp. salt, ¼ tsp. pepper and ¼ tsp. dry mustard
• ¼ tsp. basil and ¼ teaspoon tarragon
• Chopped parsley to taste

~ Leave mushrooms whole if they are small; otherwise halve, quarter, slice or chop them.
~ Place remaining ingredients in screw-top jar and shake vigorously until thoroughly blended.
~ Pour as much as you like over prepared mushrooms.
~ Toss, taste for seasoning and serve on salad greens, sprinkled with parsley. Serves 2 – 4.
