2 green onions
4 oz. cherry tomatoes
4 large eggs
2 pitas
Olive oil
Salt and pepper

Directions:
Directions:
1. Thinly slice green onions. Halve or quarter tomatoes.

2. Heat olive oil in a medium pan over medium heat. Add onions and tomatoes and cook, stirring frequently, until slightly tender (1-2 minutes).

3. Beat eggs in a small bowl with salt and pepper. Add to pan and continue to cook, stirring until scrambled (3 minutes).

4. Cut pita in half and open to make pockets. Spoon an equal amount of egg mixture into each. Serve immediately.
