3 c. flour
1 ½ tsp baking powder
1 ½ tsp baking soda
1 tsp salt
1 c. butter, softened
1¼ c. white sugar
3 eggs
1 15oz. carton ricotta cheese
¾ c. chopped nuts
½ c. packed dark brown sugar
2 Tbs. tasted wheat germ
1 Tbs. ground cinnamon
1 tsp. ground nutmeg

1. Grease the bottom and ½ inch up the side of a 13 x 9 x 2 inch baking pan; set aside. In a lg bowl, combine flour, baking powder, baking soda, and salt: set aside
2. In a lg mixing bowl, beat butter with an electric mixer on medium speed for 30 seconds. Add sugar; beat until combined. Add eggs, one at a time, beating well after each addition. Beat in ricotta cheese. Beat in as much of the flour mixture as you can. Using a wooden spoon, stir in any remaining flour mixture. Spread batter in the prepared pan.
3. For topping, in a small bowl, combine nuts, brown sugar, wheat germ, cinnamon, and nutmeg. Sprinkle evenly over batter in pan. Cover pan and chill in the refrigerator for up to 24 hours.
4. Preheat oven to 350*F. Uncover coffee cake. Bake for 35 to 40 minutes or until a wooden toothpick inserted near the center comes out clean. Cool slightly in pan on a wire rack. Serve warm.
