1 9" unbaked pastry pie shell
1 lb sweet potatoes or yams (cooked and peeled or 1 lg can yams)
¼ c. butter
1 14oz. can Eagle Brand Sweetened condensed mild
1 tsp each
*grated orange rind
*vanilla extract
*cinnamon
½ tsp nutmeg
¼ tsp salt
2 eggs

PECAN TOPPING
1 egg
3 Tbs dark corn syrup
3 Tbs light brown sugar
1 Tbs butter, melted
½ tsp maple flavoring
1 c. chopped pecans

Directions:
Directions:
In a lg bowl, beat hot sweet potatoes with butter until smooth. Beat in remaining ingredients except pastry shell and pecan topping. Pour mixture into pie shell.

Bake at 350* for 30 min.

Remove from oven, spoon pecan topping over pie and bake 20 minutes or until done.

PECAN TOPPING
beat 1 egg, 3 Tbs dark corn syrup, 3 Tbs lit brown sugar, 1 Tbs melted butter and ½ tsp maple flavoring. Add 1 c. chopped pecans.
