5 lbs apples, Pippen, Granny Smith, or McIntosh
2 c water
1 c orange juice
2 c unsweetened apple cider
2 tsp cinnamon or 3 cinnamon sticks
1 tsp ground cloves or 6 whole cloves
1 tsp allspice
1/2 tsp nutmeg

Peel, core, and thinly slice apples.
Put apples, water, orange juice, and apple cider in large saucepan and cook 20 to 25 min.
Puree mixture in a food processor, blender, or mixer until fairly smooth.
Put sauce into a large baking pan (it is best to have a baking pan with large surface so moisture can evaporate) and cook uncovered in a 325º oven for about 1 hr or until reduced to about half.
Stir from time to time.
Add cinnamon, cloves, allspice, and nutmeg. If using whole spices, grind them or tie in cheese cloth.
Stir to blend in spices.
Lower oven temp to 250º and bake mixture for 3 hrs until very dark and thick.
Stir frequently to prevent sticking.
Place in hot sterilized mason jars.
Cool.
Store in refrigerator.
