Ingredients: 5 egg yolks ½ c. sugar ½ tsp vanilla ½ c. cake flour ¼ tsp salt 5 egg white ½ c. sugar 1 inch vanilla bean or 1 tsp vanilla 4 large eggs
¼ lb bittersweet chocolate 2 Tbs. boiling water 1 ¾ sticks butter
3 Tbs sugar

Directions:CAKE 1. Beat until light and lemon colored: 5 egg yolks 2. Gradually beat in 1/2 c sugar into the egg yolks and beat for 15 to 20 min. Add ½ vanilla 3. Sift before measuring: ½ c. cake flour and Resift 4 times with ¼ tsp salt. Beat into the eggs mixture. 4. Whip until still: 5 egg whites: Fold them into the batter. 5. Bake the cake in 9 layers (use a greased paper lined pan) 6. Bake in middle of 375º, oven for 5 to 8 min. 7. Spread between layer of cake:
FILLING Place in a double boiler: 1. ½ c. sugar, vanilla bean(1 tsp. vanilla) and 4 lg eggs Beat until the eggs begin to thicken, Cool the filling slightly. 2. Cut into pieces and dissolve 1/4 lbs bittersweet chocolate in 2 Tbs. boiling water. 3. Keep this warm. Cream until light: 1 ¾ sticks of butter. Add the chocolate mixture to the whipped butter and beat. This filling may also be spread on the sides and the top of the cake. Save the best looking layer for the top. Top the top layer with caramel glaze.
CARAMEL GLAZE 1. Melt and brown in a skillet: 3 Tbs. sugar. 2. Pour it over the cake. Spread it with a hot knife. Rest the cake in a cool place for 12 or more hours |
