1 large onion, sliced thin
1 large potato, sliced thin
1 lb. Italian sausage, cooked and crumbled
3 oz. fresh mushrooms, sliced
1 small zucchini, sliced thin
1 sweet red pepper, cut in rings
1 dozen beaten eggs
⅓ -½ c. Parmesan cheese

Layer all ingredients in order listed in a greased 12 in. circular dish, 2" high. A cast iron fry pan works great also. Bake 350º for 45 minutes. Optional: Place under broiler for about 3 minutes.
