Jam Cake


Ingredients:

¾ c. butter softened
1 c. sugar
3 eggs
1 c. blackberry jam
¾ c. buttermilk
1 tsp baking soda
3 c. flour
1 tsp cinnamon
1 tsp nutmeg
1 tsp allspice
1 c. raisins
1 tsp vanilla
1 c. chopped nuts

1. Heat oven to 350º Bake for 45 min
2. sift together: flour baking soda, spices
3. coat raisins in small amount of the flours mixture
4. cream together: butter, sugar, jam and eggs (beating after each one)
5. add vanilla
6. Mix dry ingredients alternating with buttermilk, then fold in nuts and raisins

Place in a greased tube or Bundt pan and bake for 45 to 55 min. Cool, invert on platter and frost with Caramel icing.
 

Caramel Icing


Ingredients:

2 1/2 c, brown sugar
3/4 c. milk
1 1/2 tsp vanilla
3/4 c. shortening
1/2 tsp. salt.

Directions:
Place in large pan: sugar shortening milk and salt. Bring to a boil slowly, stirring consistently. Boil 7 minutes
Remove from heat and add vanilla beat on medium, until thick enough to spread.

This is a very old recipe. It originated from my great grandmother, Grandmother Elliston (my mom's grandmother) I never met her. My mom's family were from the deep hills of Kentucky. I only knew my mom's mom, Grandma Schaefer. She is the one I remember always making this cake. The icing was my favorite part.
**I remember the jam seeds getting into my teeth, so it might be a good idea to use seedless jam**
