Mom's Lemon Party Cake Recipe

1 pkg. lemon B. Crocker cake mix. (or other brand)
¾ c. Wesson oil
4 eggs
1 pkg. lemon jello - dissolved in
½ c. boiling water
1 tsp. lemon extract

Glaze:
Lemon Juice (4 oz. or the juice of 3 lemons)
2 c. powdered sugar

Cake
1. Mix all together on med. speed for 6 to 8 min.
2. Pour into a 3 qt. jello tube pan (lg ring mold), may use Bundt pan, well greased.
3. Bake in lower half of oven at 350º
4. Bake for 45 min.
5. Take out of oven, run a knife around the edges, and pour glaze over cake.
6. Let sit for aprox. 10 min. running knife around the edges several times during the process.
7. Turn onto a platter, and immediately turn back onto the permeant serving platter

This is my mother cake. I don't know where she got the recipe but she used to make these at Christmas time for all her friends and business acquaintances. Sometimes she would make 30 or more cakes. There were cakes everywhere in the house. She would wrap the cakes in clear plastic wrap and wrap them with a wide red ribbon and put decorative poinsettia on the top. Everyone loved the cakes. I never made them for Christmas presents until after she passed. When ever this cake is made it is in a small way a remembrance to her.
