Leafy Green Salad with Fried Tofu Recipe

TOFU MARINADE |

Ingredients: 1 lb. extra-hard tofu 1/4 cup fresh lemon juice 1/4 cup olive oil 1 Tbs. soy sauce 2 cloves garlic, minced 2 Tbs. chopped, mixed herbs, such as parsley, chives, basil or thyme Vegetable, avocado, canola or grapeseed oil for frying 1-2 Tbs. Corn starch

Directions:Preheat oven to 375 degrees.
Wrap the tofu in a clean kitchen towel or in several layers of paper towls, allow to rest for at least 10 minutes.
Cut tofu into 1-inch cubes. You should have around 24 cubes.
In a large bowl, combine the lemon juice, oil, soy sauce, garlic and herbs.
Mix in the tofu and marinate for at least one-hour, covered in refrigerator.
Remove tofu from the refrigerator and dust with a couple table spoons of corn starch. Stir to cover.
Heat 1-2 Tbs. of oil in a large frying pan, preferably cast iron over medium-high heat. Use just enough oil to moisten the pan bottom.
After a minute or two, add the tofu so all the cubes touch the bottom of the pan.
Cook for 5-7 minutes, turning the cubes occasionally so they brown on all sides. You want a crispy finish.
Put the skillet in the oven and roast for around 15 minutes.
Remove and add last to the completed salad below. |

Ingredients: 6 cups leafy lettuce greens 1 tomato, cut into small wedges 1 cucumber, peeled, quartered and sliced 1 carrot, peeled and cut into matchsticks 4 radishes, thinly sliced and quartered Basil leaves and/or chopped chives for garnish (optional)

Directions:To assemble the salad, place the salad greens in a large bowl or serving platter.
Top with the tomato, cucumber, carrot and radishes.
Place the fried tofu on top of the salad.
Just before serving, tear the basil leaves and scatter the piece over all.
SERVE THE DRESSING ON THE SIDE. |
