1# dried beans such as cannellini, borlotti, or flageolet
2 carrots, peeled, cut in 2" lengths
2 celery ribs, cut in 2" lengths
1 large yellow onion, peeled, halved, root end trimmed but intact
1-2 bay leaves
10 c water, plus additional for cooking
3 T salt, plus additional to season cooked beans

In a large non-reactive container, dissolve 3 T salt in 10 c water. Add dried beans, stir to distribute, soak overnight.

Next day, preheat oven to 200º.
Drain beans, rinse well under running water for severeal minutes to remove salt. Total cooking time will be about 1 hour 30 minutes, but can vary by a considerable margin, depending on the age of the beans, the weight of your cooking vessel, and your oven's temperament.

When beans are tender, remove from oven, discard aromatics, add salt to taste (about 2 tsp). Cool, uncovered, then refrigerate until ready to use. The texture will improve if held for a day. Cooked beans will keep up to 5 days, refrigerated.
