• 8 slices whole wheat bread
• 3 tbsp. butter, melted
• 2 tbsp. butter
• Ό cup thinly sliced celery
• 2 tbsp. flour, Ό tsp. salt, 1 cup milk
• 1 cup shredded Cheddar cheese
• one 6½ (184 g) can tuna, broken up
• 1 cup cooked peas and carrots, green and red pepper
• 8 slices whole wheat bread
• 3 tbsp. butter, melted

Directions:
Directions:
~ Preheat oven to 350Ί. Trim crusts from bread. Brush both sides with melted butter.
~ Press one slice into each of 8 - 6-oz. custard cups (or muffin tins). Place on cookie sheet.
~ Bake 15 – 20 minutes or until bread is toasted.
~ Melt butter in saucepan. Sautι celery and peppers till tender.
~ Blend in flour and salt. Gradually stir in milk. Cook over medium heat, stirring constantly until mixture just comes to boil and thickens.
~ Remove from heat. Add cheese and stir until melted. Add tuna and vegetables; heat through.
~ Spoon about Ό cup tuna mixture into each toast cup.
