½ c butter
1½ c packed brown sugar
2 eggs
1 c pumpkin-solid pack
1 tsp vanilla
1 tsp grated lemon zest
1 tsp lemon juice
2½ c sifted flour
1 Tblsp baking powder
1 tsp salt
1½ tsp pumpkin pie spice
1 c coarsely chopped walnuts

Directions:
Directions:
Preheat oven to 375º.
Cream butter and sugar until light and fluffy.
Add eggs one at a time.
Stir in pumpkin, vanilla, lemon zest and juice.
Re-sift flour with baking powder, salt and spice.
Blend into butter mixture.
Stir in nuts.
Drop by teaspoonful onto greased cookie sheet about 2" apart.

Bake for 12-14 minutes.

If you want to decorate for Halloween, use vanilla cream frosting and make a pumpkin face with nuts and candy corn.
