1 c. cake and pastry flour
1 1/2 c. fine granulated sugar
1 1/4 c. egg whites at room temperature
1/4 tsp. salt
1 1/4 tsp. cream of tartar
1/2 tsp. vanilla
1/2 tsp. almond flavouring

Directions:
Directions:
Sift flour and 1/2 of the sugar together 3 times
Beat egg whites and salt until foamy
Sprinkle on cream of tartar ; beat until peaks form. Add flavourings. Continue beating while adding 1/2 of the sugar 2 tbsp. at a time, beat well until stiff peaks form.
Fold in ( do not beat) flour/ sugar mixture in 4 lots
Scrape into an angel cake pan. Bake at 375' for about 35 min. Remove from oven, invert to cool immediately.
Or drop mounds on a cookie sheet, reduce cooking time accordingly.
