2 c tempura flour or low gluten flour-sifted
1 egg yolk
2 c ice water

Directions:
Directions:
Beat together egg yolk and water.
Add flour and mix lightly. Do not incorporate completely. Lumps okay.

Dip in flour and shake off excess.
Dip in batter and fry.

Keep the batter on ice.
