2 lbs ground beef
1 large green pepper, diced
1 large onion, diced
1 clove garlic, minced
1/3 cup chili powder
2 15 oz cans red kidney beans
1 6 oz can tomato paste
3/4 cup water
1 1/2 tsp salt
1 tsp sugar
1 bay leaf

Directions:
Directions:
Cook beef, onion, green pepper and garlic in a sauce pot over medium-high heat. Stir frequently until all pan juices evaporate and beef is well browned, about 15 minutes.

Stir in chili powder. Cook 1 minute. Drain liquid from beans into meat mixture, reserve the beans for later. Stir in tomatoes with their liquid, tomato paste, water, salt, sugar, and bay leaf. Heat to a boil. Reduce heat to low, cover and simmer for 45 minutes. Stir frequently.

Mix in red kidney beans, Cover and simmer 15 minutes. Discard bay leaf.

Use can omit the meat and make it vegetarian by adding more beans and tofu.

You can also add different kinds of beans - garbanzo, pinto, cannellini, etc.
