2 acorn squash
3 tsp olive oil, divided
¾ tsp salt, divided
¼ tsp pepper, plus more for seasoning squash
1 lb Italian sausage
1 onion, finely chopped
3 cups baby spinach, roughly chopped
3 cups cooked spelt or rice
1 cup shredded Swiss cheese, divided

Directions:
Directions:
1. Preheat oven to 400°F.
2. Cut squash in half and remove seeds. Brush cut sides with 2 tsp olive oil.
3. Season with ¼ tsp salt and pepper.
4. Bake cut-side down 30 to 35 minutes on a foil-lined baking sheet coated with cooking spray
5. In a skillet over medium heat, cook sausage, then put in a large bowl.
6. Heat remaining 1 tsp olive oil in same pan and add onion and baby spinach; cook 4 to 5 minutes, then
add to sausage.
7. Mix in spelt or rice, ½ cup Swiss cheese, remaining ½ tsp salt and 1⁄4 tsp pepper.
8. Flip acorn squash over and fill each cavity with sausage mixture. Top with remaining 1⁄2 cup Swiss
cheese. Bake 15 minutes.
