1/4 cup peanut oil
1 onion
1 clove garlic
1 1/2 cups long grain rice
1 can Rotel tomatoes
2 1/2 cups water
1/2 tsp salt
1/4 cup Monterey cheese

Directions:
Directions:
Saute onions & garlic in oil. Rinse, soak, then add the rice. Cook until golden brown. Stir in tomatoes & water. Cook until water is absorbed. Covered, med heat - then lower heat & cook 5 min. Remove from heat let stand 30 mins. Garnish with cheese.
