1 ½ cups sugar (or a little less)
2 large cans of pineapple chunks in pineapple juice, drained, save the juice
6 tablespoons pineapple juice
5-6 tablespoons flour
2 cups shredded cheddar cheese
4-5 tablespoons butter, melted
2 cups crushed Ritz crackers

Directions:
Directions:
Put drained pineapple in a 13 X 9 baking dish. Mix the sugar and flour together and spread it evenly over the pineapple. Pour the pineapple juice over mixture and spread the shredded cheese over the mixture. In a bowl, mix together the crushed Ritz Crackers and melted butter. Spoon the cracker mixture over the pineapple. Bake at 350℉ for 15-18 minutes.
This can easily be halved and baked in an 8 X 8 dish. Peggy loves to serve this with ham.
