3-5 lbs boneless cut of beef brisket would be an excellent choice.
2/3 onions
3/4 cloves of garlic
12/15 olives
1/2 lb sharp pork sausage.
2 cans tomato sauce
Water
Oregano salt basil
Sugar if sauce is bitter or too acidic.
5/6 peeled and sliced potatoes or 1 lbs of small red potatoes or fingerling gold potatoes

1. Slice a pocket into beef to be stuffed. (This year s why a flank or brisket would be good for this meal)
2. Mix all of the ingredients in a bowls except sauce water and potatoes.

3. Stuff the beef with the mixture and sew shut or use a long skewer to seal shut.
4. Cover roast with sauce and water(2 cans worth of water) also you could use a spaghetti sauce in lue of tomatoes sauce.
5cover with foil and cook for 2 hours at 450 degrees.
5. Add potatoes and cook on additional hour.
6. Pull out of oven. Let set for 20 minutes before serving but keep covered while setting.

This recipe comes from Grandma Bade. I don't know how often we ate because the ingredients were probably quite expensive so maybe for a birthday or company.
