2 cups sugar
1 cup oil
3 eggs
2 cups grated zucchini
*optional 1 cup finely chopped nuts
1 TBS vanilla
2 1/4 cups flour
2 tsp baking soda
2 tsp cinnamon or apple pie mix seasoning or pumpkin pix seasoning
1 tsp salt
1/2 tsp baking powder
Raisins or cranberries if you would like

Directions:
Directions:
1. Combine flour baking soda baking powder salt and spices in a bowl.
2. Beat eggs in mixing bowl.
3. Gradually add the oil and sugar.
4. Slowly and carefully add the flour mixer add the remaining ingredients of vanilla zucchini and nuts and raisins. Pour into 2 greased and floured loaf pans. Bake at 325 degrees for 1 hour ur 10 minutes.

Note you can add a yummy cinnamon coffee cake crumble on this!
Cinnamon chips or salted Carmel chips.
There are lots of variations as well as if you watch carefully you could turn this into a. Offer cake by baking in a 9x13 pan.

This recipe comes from our 1st cousin Joni (Johnson) Berg. Funny that I had the recipe she made for mom and the same recipe written by Mom but with no title or who's recipe it was.
