2 jars pearl onions
4 Tbsp butter
4 Tbsp flour
4 cups whole milk
Plain breadcrumbs
Parmesan cheese
Salt and white pepper to taste

Pre-heat oven to 350 F.

Open jar of onions and sit in a strainer for 5 minutes. This will dry the onions out a bit.

Make the béchamel: melt the butter in a saucepan over low heat. Whisk in the flour and cook until the raw flour taste is gone (2 min or so). Add the whole milk slowly. Bring to a boil until slightly thickened. Season with salt, and white pepper to taste.

Pour onions and bechamel into an oven proof container. Cover with a light layer of breadcrumbs and parmesan cheese. Bake at 350 F for 1/2 hr.
