2 C all purpose flour
¾ C sugar (I used less a ought ½ C)
4 tsp baking powder
1 tsp vanilla
2 large eggs separated
1 ½ C whole milk
1 C melted butter

Directions:

n a bowl, combine flour, sugar and baking powder. In another bowl, lightly beat egg yolks. Add milk, butter and vanilla; mix well. Stir into dry ingredients just until combined.

Beat egg whites until stiff peaks form; fold into batter.

Bake in a preheated waffle iron according to manufacturer's directions until golden brown. Serve with strawberries or syrup.

Stiff peaks are achieved when the whites stand up in points, rather than curling over. If you tilt the bowl, the whites shouldn’t move.

2 waffles: 696 calories, 41g fat (25g saturated fat), 193mg cholesterol, 712mg sodium, 72g carbohydrate (34g sugars, 1g fiber), 10g protein.

I always use less sugar and more baking powder than called for. In this recipe I used on extra egg white and it made them fluffier and lighter.

You can also substitute whole wheat flour for a healthier version. I would not do this, personal choice, but you could also substitute almond milk for the whole milk.

Try adding a little cinnamon for a different twist as well.
