4-6 lb Chicken..................................................€€€....Noodles..€€€
1 Small Onion...................................................2 ½ Cups Flour
4 Stalks Celery, Chopped.................................1 tsp Salt
2 Carrots, Sliced...............................................1 Cup Butter
2 tsp Parsley Flakes.........................................¾ Cup HOT Broth from pot
½ tsp Saffron

Directions:
Directions:
Put chicken in a large pot and cover with water. Add rest of ingredients in left column, bring to a boil then simmer til the meat is tender. Discard the bones, about an hour. In the meantime make the noodles:
Mix flour and salt then cut in butter, Add HOT broth and mix thoroughly. Roll out as thin as possible on a floured surface. Cut into diamonds or rectangles. When chicken is done, drop noodles one at a time into boiling broth. Cook about 15 minutes and serve at once.
