2# boneless rib eyes cut 1/2 inch thick ( or use cubed steak/sirloin )
2 T. table salt for brine in cold water
veg oil for frying
4 cups self rising flour
1 tsp. paprika
1 tsp garlic powder
1 T. Kosher salt
1 tsp. onion powder
1 tsp. fresh ground pepper
1 chopped green part of scallion or handful of chopped chives

Using smooth side of meat mallet, pound steaks to tenderize and flatten. Place in shallow pan and cover with water and table salt to create brine. Cover and refrigerate 2 hours or overnight.

In deep large skillet, heat 4 inches of oil to 350º- medium high.
In shallow dish, mix flour, S&P and spices. Lift steaks from brine and shake - then drop into seasoned flour mixture. Coat well, and shake off excess flour. Repeat step by dipping brined and floured steak back in brine and then re- flour.
Slip steaks into hot fat - 2 pieces at a time. Fry 10-12 minutes on each side. Let rest 10 minutes. Sprinkle with scallions.

Serve with mashed potatoes and white gravy.

To make self rising flour for whole recipe: Replace 3 T. flour with 2T baking powder and 2 tsp salt.
