Coconut Shortbread Recipe

3/4 cup shortening
3/4 cup brown sugar
1 egg
2 teaspoons vanilla
2 cups flour
1 teaspoons baking soda
1 teaspoons cream of tarter
1/2 teaspoons salt
1 cup coconut

Directions:
Directions:
Preheat oven to 350ºF. In large bowl, cream first 4 ingredients. In medium bowl, combine dry ingredients and then add to cream mixture. Add coconut. Roll into balls, place on sheet and flatten with fork. (can roll in chopped nuts before flattening).
Bake 10 minutes. Using rounded side of a teaspoon to make an indent in the middle and fill with jam or lemon curd or ½ cherry. Bake for another 5 minutes. Cool on rack.
