1 cup dry lentils ( lentil trio is best)
10 ounces canned crushed tomatoes
1 Tbsp minced ginger
1Tbsp minced garlic
1 Tbsp cayenne pepper
1 Tbsp cumin
1 Tbsp curry powder
1 Tbsp turmeric
1 Tbsp coriander
1 cup water
4 Tbsp vegan butter
1/8 tsp salt ( or more to taste)
Ground black pepper
1/3 cup vegan half & half

Directions:
Directions:
In a large sauce pan, add lentils and fill with water to cover by 2 inches. Bring to boil. Reduce heat and simmer for 10 minutes until lentils are slightly tender. Drain lentils and return to pan.

Add all other ingredients, except for half & half. Simmer for about 45 minutes until dal is thick. Make sure to check and stir periodically to make sure the water does not cook out.

Stir in half & half

Serve over jasmine rice with a side of toasted Naan bread.
