1 -2 dozen cherry peppers
1 lb.sausage, skins removed
romano cheese
salt and pepper to taste
1-2 eggs
hand-full of breadcrumbs

Directions:
Directions:
Cut the tops off of the peppers and pull out the seeds.
Cook the sausage and drain. Mix with cheese, salt and pepper, to taste. Add in an egg or two. Throw in a handful of breadcrumbs, if desired.
Stuff peppers with the sausage mixture.
Bake at 350º for approximately 20-30 minutes.

You can prepare these ahead of time and freeze. Adjust the hotness by choosing mild, medium or hot sausage and peppers. Cheese and the hotness of the pepper-sausage combination is what makes these delicious.
