6 tablespoons extra-virgin olive oil
1 large red onion (white will do if you don't have on hand)
3 tablespoons chopped fresh thyme (if using dried, use less, about 1 T.)
2 (28-ounce) cans peeled whole tomatoes, crushed by hand
Salt and freshly ground black pepper

In a large (3-qt) saucepan, heat the olive oil over medium heat. Add the onion and cook until soft - 8 to 10 minutes.
Add the thyme, tomatoes, and juice
Bring to a boil, stirring often.
Lower the heat and simmer for 30 minutes until sauce thinkens.
Season with salt and pepper.
Yield: 4 cups Preparation time: 15 minutes Cooking time: 45 minutes
