Pork Tenderloin

Marinade:
1 c red wine
1 c soy sauce (light or reduced sodium)
½ c light oil (canola or olive oil)
2 sprigs of rosemary

1 ½ c whipping cream

Directions:
Directions:
Put the marinade in a large ziploc bag, mix around and add the pork.
Marinate the pork for a minimum of 4 hours, best if left overnight or even 2 days.

Pull the meat out of marinade, put in a baking dish and bake at 350º until meat is cooked, approximately 40 min.

Pour remaining marinade in a large frying pan. Reduce the marinade over a med-low heat until it is about half the volume.
Add the whipping cream 1-1½ cups as desired.

Serve with rice or mashed potatoes and with sautéd mushrooms
