2 Tbsp butter (unsalted real butter)
1 white onion (medium)
2 pounds red cabbage (finely shredded roughly 6-8 cups)
2 small-medium green apples (thinly sliced)
¼ cup apple cider vinegar
¼ cup filtered water (or more as needed)
½ tsp salt (I don’t use salt in this dish)
Freshly cracked pepper

Sauté onion in butter covered over medium to medium-high heat for about 5 minutes, stirring occasionally and until the onions are soft and slightly brown but not burnet. This is where I would add a touch of salt, but that is optional. Add the cabbage, apple, vinegar, water to the pot. Leave the heat at medium-low, place a lid on the pot, and let the cabbage cook, stirring occasionally, until very tender. Somewhere about 20 minutes or so.

This style of red cabbage, I found best with smoked Bavarian style sausage and garlic mashed potatoes. I leave some chunks in mashing potatoes and always boil the sausage. This really is a super delicious meal with touch of spiciness yet sweetness.
