4 egg whites
1½ cups granulated sugar
1 tsp vanilla
1 tsp lemon juice
2 tsp corn starch
2 cups heavy whipping cream
2 tsp granulated sugar
2-3 cups of fresh fruit: berries, pineapple, peaches, mango, strawberries.

Preheat oven to 300 degrees.
Line a baking sheet with parchment paper then draw a 9 inch circle on the parchment paper.

Make the meringue:
Beat the egg whites with electric mixer until stiff but not dry.
Gradually add in the sugar one tablespoon at a time, beating after each addition, until thick and glossy.
Mix the vanilla, lemon juice and cornstarch in a small bowl, then gently fold into the egg white mixture.
Spoon mixture inside the circle drawn on the parchment paper. Working from the center, spread mixture toward the outside edge, building edge slightly. This should leave a slight depression in the center.
Bake for 1 hour then cool completely. Transfer to a serving plate.

Whip the heavy cream with two tsp of sugar until soft peaks form.

Spoon the whipped cream into the center of the meringue. Top generously with the fruit.

This is a beautifully simple, delicious dessert with high wow factor. To serve, use a large serving spoon, and cut down into the meringue to bring up some of the meringue, whipped cream and fruit for each plate.
