1 Cup Bran Cereal
1 1/2 cup buttermilk
2 egg whites
2 TBS brown sugar
2 TBS of vegetable oil
2 Cups flour ( I prefer to use I bleached)
1 tsp baking soda
1/2 tsp cinnamon or pumpkin spice
1/4-1/2 tsp salt
*option: add chopped nuts, fruit, or salted Carmel chips for a special treat. You could raven just top them individually.

1. Soak cereal in the buttermilk for 5 minutes
2. Add the rest of the ingredients to the bowl and mix.
3. Scoop batter into muffin cups until Cup is 1/2 full.
4. * Top with ladies fruit or nuts if you want.
5. Bake at 375-425 degrees about 12-18 minutes. If you lightly touch the top and it bounces back like a sponge they are cooked.
They are best warm! Use cinnamon butter or butter and honey for a special treat!
