Spiced Mini Bundt Cakelets with Salted Caramel Sauce Recipe

1 1/2 cups flour 1 tsp. baking powder 1 1/2 tsp. cinnamon 1 1/2 tsp. ground cloves 1 tsp. all spice 1 tsp. nutmeg 1/2 tsp. salt 1 1/2 cups sugar 1/2 cup vegetable oil 2 large eggs 1/2 cup applesauce
Caramel Sauce:
3 Tbs. unsalted butter 1/2 cup brown sugar 1/2 cup heavy cream 1 Tbs. light corn syrup 1/4 tsp. fine salt

Directions:Preheat oven to 325F
Grease and flour a bundt pan or bundt cakelets pan.
In medium bowl mix dry ingredients together.
In large bowl beat sugar and oil until sugar incorporated. Add eggs one at a time, beating well each time. Reduce speed of beaters and add applesauce. Add flour mixture in thirds.
Fill cakelets 1/2-3/4 full or fill bundt pan.
Bake 20-25 minutes. Let cool.
Sauce:
Over medium-high heat combine butter, sugar, cream and syrup. Stir and bring to a boil. Stir occasionally for 3 minutes. Remove from heat and add salt. Pour over bundt cake(s) while warm. |

Notes: This recipe came with the Bundt Cakelet pan Gayle gave me for Christmas. I made them for a dinner party with the ladies from work and they said they were definitely a hit. You could make one Bundt cake if you don't have the small cakelet pan.
