2 C. Sugar
1-1/2 C. Oil
4 Eggs
2-3/4 C. Flour
1 tsp. Baking Powder
1 tsp. Baking Soda
1 tsp. Cinnamon
1/4 tsp. Salt
1-1/2 C. Crushed Pineapple
3 C. Carrots, grated
1 tsp. Vanilla
1 C. Nut, chopped

Frosting:
8 oz. Cream Cheese
1/2 Stick Butter
1 Box (1 lb.) Powdered Sugar
1 tsp. Vanilla
1 C. Nuts, chopped

Directions:
Directions:
Preheat oven to 350º.
Mix together sugar, oil and eggs. Add dry ingredients and mix well. Blend in pineapple, carrots, vanilla and nuts. Pour into two 9” round cake pans, that have been sprayed with a non-stick spray. Bake 25-30 minutes. Cool cake before frosting.

Frosting:
Cream butter and cream cheese together. Mix in powdered sugar. Blend in vanilla and nuts. Frost cooled cake, between layers, top and sides.
