2- 10 oz. packages chopped frozen spinach, thawed and drained well (or a large container of fresh baby spinach, steamed and drained)
1 c. grated parmesan
2 T. minced onion
2 eggs, beaten
2 c. herb seasoned croutons
3 T. butter, melted

Directions:
Directions:
Mix cheese and onion to well drained spinach, then add eggs and mix well. Add croutons and melted butter, mix until combined.

Use a small or medium scoop to shape into balls. Place on wax paper, wrap well and freeze. Do not thaw before baking.

When ready to serve, bake frozen at 375º for 20-25 minutes, or until lightly browned (15 minutes if you don’t freeze them).

This might be my oldest go-to recipe for an easy hors d’oeuvre. What I love about it is that they are super easy to make and delicious to eat.
