2-1/2 C. Milk
3 Egg Yolks (reserve whites for meringue)
1/2 C. Sugar
2 T. Flour
1/2 Stick Butter
1 tsp. Vanilla
Dash of Salt
Coconut
Baked Pie Crust

Meringue:
3 Egg Whites
2 T. Sugar
Coconut

Directions:
Directions:
Preheat oven to 350º.
In a large saucepan, add milk, egg yolks, butter, vanilla and salt and bring to a boil. While boiling add sugar and flour that have been combined together and continue boiling till mixture thickens to a pudding consistency, stirring constantly. Remove from heat and add coconut ( approx. 1 cup), as desired. Pour into a baked pie crust. Prepare meringue as directed below and add to top of pie filling.

Meringue:
Beat egg whites a little bit, then add add 2 T. sugar and continue beating until stiff peaks form. Add to top of pie filling and seal to crust edges. Sprinkle top with coconut and bake till browned.
