6 cups flour
8 Eggs
3 T Extra Virgin Olive Oil

½ c Water

Directions:
Place flour on hard clean surface, make a well in the middle and add eggs salt EVOO and small amount of the water. Add more water as needed to get smooth. Mix together. Knead for about 10 minutes. Wrap in plastic wrap and let rest for about 30 minutes. I take small pieces off the ball and run through pasta machine starting on #1, fold over itself 3 times while running through, then run through 1 time on each setting up to #5. This is the right thickness for lasagna or thin spaghetti.. After done with the machine, sprinkle with flour so it won't stick together. I put layers on parchment paper sprinkled with flour. When ready boil gently for about 45 seconds, it will rise to the top of the pan when ready. This will make 2- 9x13 trays of lasagna.
