Crust:

2 sticks butter, cubed
2 cups flour
½ cup sugar
¼ tsp salt

Filling:

1 ½ cups sugar
¼ cup flour
4 eggs
grated zest and juice of 4 lemons
¼ cup powdered sugar

Directions:
Directions:
1. Preheat oven to 350 degrees. Grease 9 x 13 inch baking pan.

2. Crust: Stir together flour, sugar, and salt in a large bowl. Add the butter and cut it in until the mixture resembles fine crumbs. Press evenly into the bottom of the prepared pan, Bake until golden, 25 to 30 minutes. Set baking dish onto a rack to cool.

3. Filling: Mix together the sugar and flour in a medium bowl. Add eggs and whisk to combine thoroughly. Mix in lemon zest and lemon juice. Pour the filing onto the crust and bake until just set, about 25 minutes.

4. Let cool completely until bars are set, at least 2 hours in a refrigerator. Sift the powdered sugar over the top and cut into bars.
