3 tbsp. fine garbanzo flour
1 tbsp. cornmeal
1/4 tbsp. salt
pinch of black pepper
1/2 green pepper (or other omelette veggie)
1/2 onion
1 tbsp. oil
1/2 cup water

Directions:
Directions:
Chop the onion and pepper and saute in oil over medium-high heat until browned and translucent. Mix flour, cornmeal, salt and pepper. Add in water and whisk to form a creamy batter. Put pan over medium-high heat. Lightly oil pan. Add in half of the sauteed veggies. Cover with half of the batter. Cook for 2 minutes. Flip and cook for 2 more minutes. Raise heat to high to brown. Do not leave on the heat for too long as batter will dry out. Repeat with remaining veggies and batter.
