1 can unsweetened cream of coconut
½ c. water
1 c. crushed pineapple (juice included)
2 tsp. granulated sugar
1 T. unsalted butter
½ tsp. kosher salt
½ tsp. red pepper flakes
1 c. basmati or jasmine rice
juice ½ lime
chopped fresh cilantro

Directions:
Directions:
Bring water, Cream of coconut, pineapple, sugar, butter, salt, and red pepper flakes to a boil in a small saucepan. Stir in rice, reduce heat to low, and simmer, partially covered for 15 minutes or until tender. Remove pan from heat, let sit for 5 minutes, then fluff rice with a fork. Stir in lime juice and chopped cilantro ( I love cilantro so I usually go heavy but you can add as much as you like).
