1/2 c butter, softened
1 c sugar
1 large egg
1 tsp vanilla
2 c flour
1 tsp baking powder
1/2 c seedless raspberry jam
1/3 c walnuts, chopped fine
Raw cane sugar

Directions:
Directions:
In a large bowl, cream butter, once smooth slowly add sugar until light and fluffy.
Beat in egg and vanilla.
In another bowl, whisk flour and baking powder.
Gradually combine flour mixture into creamed butter mixture.
Chill dough overnight before rolling out.

Roll dough between sheets of wax paper into about a 12" square.
Remove wax paper.
Spread dough with jam.
Sprinkle nuts on top of jam.
Roll dough up tightly, jelly-roll style; wrap in plastic. Refrigerate for 2 hours or until firm.
Heat oven to 375 degrees F.
Unwrap dough and cut crosswise into thin slices (abt 1/4" wide).
Place 2" apart on an ungreased baking sheet; sprinkle with raw sugar.
Bake 9 to 12 minutes or until edges are golden.
Place cookies on wire rack to cool.
