1 tablespoon vegetable oil
1 lb Beef Stewing Cubes, trimmed
6 cup vegetables, cut in small pieces (i.e. onions, carrots, celery)
¼ cup pot barley
1 can (10 oz/284 mL) beef broth
¼ teaspoon dried thyme
1 bay leaf
1 envelope onion soup mix
2 envelopes beef oxo

Directions:
Directions:
Heat oil in Dutch oven over medium-high heat; brown beef cubes. Stir in vegetables, barley, broth, thyme and bay leaf.

Add 4 cups (1 L) water add oxo and onion soup mix; bring to boil. Reduce heat to simmer; cover and cook for about 2 hours or until beef and barley are tender.

Discard bay leaf before serving.
